Look forward to seasonal game specialties from deer and wild boar, including a hearty game stew with young deer and roe deer in a root and red wine sauce with bread dumplings and lingonberry compote pear, noble ragout of young deer with hand-shaved noodles and lingonberries, braised roast of the deer leg, and medallions of roe deer saddle with forest mushrooms. The offer is complemented by delicious wildfowl such as crispy roasted farm duck with natural gravy, bread dumplings, apple compote, and warm cabbage salad, as well as traditional Martin’s goose with gravy, stuffed apple compote, and red cabbage. The game dishes are offered as a seasonal, rotating special until Advent and supplement the regular menu. The selection varies depending on the season and guest turnout, so not all game specialties are always available at the same time.
