
From grass comes cheese. At the Alpinus cheese workshop on the Wildalm, you will learn how our various products are made from the best alpine milk. The alpine pasturing of animals and the production of high-quality dairy products was already practiced by the Romans and has always been an integral part of the Alpine region. In this course, we will take you behind the scenes of milk production and processing on the alm. During a guided tour, the journey of milk, starting from the pasture, through the milking parlor, cheese dairy, and ripening cellar, to the snack platter, will be shown. In an interactive workshop, we will jointly produce our own cheese and taste the fresh cheeses as well as some of the Wildalm cheeses together with fresh bread from the wood oven. In this workshop, grilling cheese, fresh cheese, and ricotta will be produced. Each person will receive a cheese to take home after the workshop.
